This is one of my 'Mums Classics'. Originally taught to me as a modification of a simplified Bolognese, it's a perfect beginner recipe. I have since augmented it with some more spices and a bell pepper.
The rice (1/3 cup) is only one servings worth, you should really be making it fresh every time.
Ingredients
- 500g 5% beef mince
- 1 tin chopped tomatoes
- 1 tin kidney beans
- 1 onion
- 1 pepper
- 1 bag spinach
- spices (Chilli, Smoked Paprika, Cumin, Garlic, Black Pepper) to taste
- rice
Method

Begin boiling 1/3 cup uncooked rice.

In separate pan, cook mince, onion, and pepper.

Add tomatoes, beans, spices, and spinach.

Simmer until cooked.

Serve.
Author's notes
I find that spicier meals are *perfect* for the colder months. Try making this one as we near winter.
